Taushe Kosambari (Seasoned Cucumber Salad)

Taushe Kosambari is a healthy salad. In Konkani, taushe means cucumber. I learnt this recipe from my mother. This can be prepared within 15 minutes and requires very few ingredients.



Cucumbers are very healthy and it is good to eat them often. My husband loves them and hence we see that at least one cucumber is always there in our fridge. We have also started to buy the mini cucumbers which are not only pretty but are very good and crunchy. Try making this salad and get the goodness of cucumbers.

Ingredients:
  • Cucumber, medium sized- 1
  • Grated Coconut, Fresh/Frozen- 1-2 Tbsp
  • Green Chilli- 1-2
  • Oil- 1/2- 1 tsp
  • Mustard seeds- 1/4 tsp
  • Curry Leaves- 3-4
  • Salt- To taste

Procedure:

Wash, peel and chop the cucumber finely (I have used the seedless variety i.e English Cucumbers. Hence didn't remove its peel). Then chop the green chilli finely.


Then take a mixing bowl and add the chopped cucumber, green chilli, grated coconut and salt. Give them a good mix and then add the seasoning.

For Seasoning- Heat oil and then add mustard seeds. Once it starts spluttering, add curry leaves and turn off the heat. Add this to the salad. Taushe Kosambari is ready!!


Serve it immediately. Above measurement serves two people.
