Video: Tendle Bibbe Upkari (Ivy Gourd- Tender Cashew Stir fry)| Konkani Recipes

Tendle Bibbe Upkari is a very popular Konkani dish. Ivy gourd and tender cashews are cooked together in a simple seasoning. Finally some fresh grated coconut is added to finish off the dish. The dish tastes wonderful and goes very well with rice and dal. This dish is prepared every year for Ugadi (in the month of March or April). During this time fresh tender cashews are available in the market. I have used the dried ones. You can also substitute plain cashews too. I hope you enjoy making this. Paneer Burrito Bowl is a tasty, Vegetarian meal. This meal consists of 5 components - Black beans, Guacamole, Cilantro- lime rice, Spiced Paneer and Fajita Veggies. All together they make a great meal. Paneer can be substituted by tofu. If desired the bowl can be topped by Pico de gallo, Sour cream, chopped lettuce, Shredded cheese etc. This recipe is a family favorite. I hope you enjoy it as much as we do. Mashinga Palle Ambado is a rice- lentil based fritters. The drumstick leaves (Moringa) adds a wonderful flavor. The fritters are deep fried in coconut oil. Ingredients: Leftover Shevai - 5 pieces Carrot - 1 Green beans - 12-15 Bell pepper (Capsicum) - 1/2 Onion - 1/2 Ginger - 1 inch Grated Coconut - 2 Tbsp Salt - 1 tsp For Seasoning: Coconut Oil - 2 Tbsp Mustard seeds - 1 tsp Urad dal - 2 tsp Chana dal - 2 tsp Green Chilli - 1-2 Curry leaves - 5-6 Turmeric powder - 1/4 tsp I have used a chopper for chopping the vegetables. Video: Shevai (String Hoppers) | Coastal Karnataka Recipes

Shevai is a very popular breakfast in coastal region of Karnataka. Soaked rice is ground with coconut. The paste is then cooked and steamed. Finally it is pressed in a String hopper mould to get fresh rice noodles. It is a long process but its really worth at the end. The taste of the rice noodles depend on the rice which is used.
