Video: Vegetarian Loaded Black Bean Nachos| Mexican Inspired Recipes

This Version of Nachos is full of flavor and each corn chip is equally tasty. Here every chip is slathered with refried beans. Then a spicy balck bean mixture is added followed by cheese. It is baked until the cheese melts. Then finally topped with onion, tomato and cilantro. It is then served right away with guacamole. Taro leaves (Colocasia Leaves)/ Kesuvina yele are used to make a very popular dish called Pathrado/Pathrode. Generally the leaves are smeared with a masala paste, piled on one another and then rolled. It is then steamed and served. Here is one more variation that I learnt from my mother. I always make a big batch of mint chutney and portion them in ice cube tray. Then store them in resealable bags for later use. Whenever required, I pull out few cubes and thaw them. This way making this sandwich is a breeze. The bread slices are toasted and then a good amount of chutney is applied. Layers of veggies are placed between the two toasted bread slices.
