Kharjura Sheera (Dates- Semolina Pudding)

Kharjura Sheera is a twist to the normal Sheera (semolina pudding). In kannada, Kharjura means dates. This pudding has an extra touch from the dates added. I got inspired from a post on FB (posted by Pooja) and tried this way. It turned out very good.



Dates is a favorite of mine. I like to eat it as it is. This recipe was in my mind since a long time. This pudding doesn't require much sugar as the dates give enough sweetness. Do try it sometime if you crave for something sweet (you don't have to spend much time in your kitchen for this:-) )

Ingredients:
  • Semolina/SoojiRava1/2 cup
  • Water- 1 cup
  • Sugar- 1/8- 1/4 cup
  • Dates (kharjura), small sized- 14-15
  • Cardamom pods- 4
  • Ghee* (clarified butter)- 1/4 to 1/3 cup
  • Cashew nut- 4-5
*More the ghee, better it tastes. Adjust according to how rich you want it.



Procedure:

Chop the dates and crush them coarsely (not paste) in a blender.



Now Start heating the water in a small pot on a low flame. When the water is getting heated, prepare the semolina mixture. Heat ghee (add ghee in stages. So don't add at one go) in a pan and add the semolina. Fry until you get a nice aroma (don't turn it brown).


Then transfer it into a bowl. Now in the same pan, add some more amount of ghee and fry the cashews until they turn light brown. 


Transfer it into a bowl and start frying the coarsely grounded dates in the remaining ghee. 


Once the dates releases a nice aroma, add the roasted semolina and mix well. Break down the lumps of the dates so that it gets mixed uniformly with the semolina.


Now pour the hot water and mix vigorously (Care should be taken while pouring the water. Otherwise you will get lot of lumps).




Allow the semolina- dates mixture to cook in the water. Once the water evaporates completely, add the sugar.




Mix well and continue heating the mixture until all the sugar is absorbed. Then turn off the heat. Finally add the cardamom powder and mix well. Kharjura Sheera is ready!




Serve it hot/warm. Above measurement serves 2-3 people.
