Pudina Ambado (Mint Fritters)

Pudina Ambado is a simple and tasty fritter. I got this recipe from my mother. Last week I got a huge bunch of mint and was thinking to use it in some way and I remembered my mother had made these fritters long back and hence I asked her and tried it. It turned out tasty and hence thought of sharing this recipe. Try making this version and enjoy!


Ingredients:
  • Rice- 1 cup
  • Roasted red chilli- 3-4
  • Grated coconut, fresh/frozen- 1 Tbsp
  • Tamarind- A small piece
  • Mint/Pudina leaves- 1/2 cup, packed
  • Salt- To taste
  • Oil- For Deep frying

Procedure:

Wash and soak rice for 1-2 hours. Drain the water completely. Now grind red chilli along with grated coconut, tamarind. Once ground, add the soaked rice and pulse it 4-5 times until everything comes together. Add few tsp of water, so that everything blends well to get a paste which is not too coarse/too fine. Transfer it to a bowl and add salt. Then add in the chopped mint leaves. The batter is ready.


Now make small balls and flatten it slightly.


Deep fry these flattened discs until they turn golden brown on both sides. Remove and drain it on a paper towel to drain out excess oil. Pudina Ambado is ready!!


Serve it hot. Above measurement makes 12-15 ambados (fritters).
